balsamic reduction
- 1/2 cup1/2 cup1/2 cup Crushed Strawberry Vinegar - Kosterina

- 2 Tbsp2 Tbsp2 Tbsp Golden Monkfruit Sweetener (with Allulose) - Lakanto

- Water, as needed to thin reduction
chicken
- Avocado Oil, or fat of choice for cooking
- 2 lb2 lb2 lb Chicken Thighs, Boneless Skinless, cut into 1/4-1/2" pieces

- 1/2 tsp1/2 tsp1/2 tsp Salt and Pepper
- 2 Tbsp2 Tbsp2 Tbsp Crushed Strawberry Vinegar - Kosterina

- 2-4 Tbsp2-4 Tbsp2-4 Tbsp Golden Monkfruit Sweetener (with Allulose) - Lakanto

- 1/4 cup1/4 cup1/4 cup Water
for serving
- Beef Tallow Potato Chips, Classic - Vandy, any flavor you like

- Roasted Red Pepper, sliced
- Peperoncini Peppers, sliced

balsamic reduction
- whisk vinegar & sweetener together in a small saucepan.
- bring to a boil, then reduce to a simmer for 8–10 minutes, stirring occasionally, until thickened.
- remove from heat & let cool slightly — add a splash of water if it gets too thick.
chicken
- heat your fat of choice in a large skillet over medium-high.
- season chicken thighs with salt & pepper, then add to skillet. cook for 6–8 minutes, stirring occasionally.
- pour in vinegar, monk fruit, & water. stir to coat.
- reduce heat & simmer for 5–6 minutes more, until chicken is cooked through & sauce is slightly glossy.
building the nachos
- to a plate, first add siete potato chips.
- top with chicken, caramelized onion jam, veggies, meats, parmesan, & fresh basil.
- finish with a drizzle of balsamic reduction, red pepper flakes, & more herbs if you like.
