Dipped & Chewy Granola Bars (Costco Copycat) (Edit recipe)

Have you seen the Dipped & Chewy Granola Bars at Costco?  The ingredients list is LONG on the Costco version, and I knew I could make them with less AND better ingredients and I was very happy with the result! (So happy that just eating one was really hard to do) These are such a fun treat that the whole family will love!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Stir the base ingredients together in a bowl. Press into a granola bar mold 3/4 of the way full. Freeze while you make the caramel.
  2. Mix the ingredients together for the caramel and stir until thick. You can either use as is, or microwave for 15 seconds for more of a gooey caramel. Top the granola bars with the caramel and put back in the freezer. Freeze for 1 hour.
  3. Melt 1/3-1/2 cup chocolate chips (depending on how much you want to cover in chocolate - I just did the top so I used 1/3 cup) in a shallow dish.
  4. Take granola bars out of the freezer and out of the mold and place on a baking sheet with wax or parchment paper.
  5. You can either dip the tops in chocolate like I did, or cover the whole bar in chocolate. Freeze again for 15 minutes. Store in freezer or fridge (I prefer freezer)
