This chicken tortellini soup is so simple to make, super tasty and one your whole family will love! I like to cook my chicken ahead of time in the slow cooker, but you can also use a rotisserie chicken, bake it - you name it. We love that this soup is light and brothy, but also holds you over since its packed with protein from chicken and tortellini. Serve it with fresh grated parmesan and enjoy!

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Prepare your chicken ahead of time. I cook mine in the crockpot for 4 hours on low or 2 hours on high to get it finely shredded.
  2. In a large pot over medium heat, melt the butter with the olive oil.
  3. Add the diced onions, celery and carrots, and cook until softened.
  4. Add garlic, Worcestershire sauce, hot sauce, italian seasoning, salt and pepper.
  5. Saute for one minute, then add in the chicken and broth.
  6. Bring to a boil, then lower to a simmer for 10 minutes.
  7. Add the tortellini and adjust seasonings here to taste.
  8. Serve with cheese or as is, and refrigerate in an air tight container.
