Proscuitto Pesto Caprese Pasta Salad
Between the al dente pasta, the creamy burrata, the chewy proscuitto, the salty pesto, and the sun-dried tomatoes.. there’s a lot going on that everyone will love! This is the perfect pasta salad to throw together quickly since the only thing you really need to do is cook the pasta. You can even use a store bought balsamic vinagrette to make this even easier, but I'm sharing the full recipe below and you can make it work for you!
Ingredients
- 1 lb1 lb1 lb Pasta

- 0.5 lb0.5 lb0.5 lb proscuitto
- 0.5 cup0.5 cup0.5 cup sun dried tomatoes
- 0.333 cup0.333 cup0.333 cup Basil Pesto
- 0.333 cup0.333 cup0.333 cup Pine Nuts

- 5 oz5 oz5 oz Burrata
- 0.5 cup0.5 cup0.5 cup Extra Virgin Olive Oil
- 0.5 cup0.5 cup0.5 cup Balsamic Vinegar
- 0.5 tsp0.5 tsp0.5 tsp Salt

- 0.5 tsp0.5 tsp0.5 tsp Black Pepper

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Cook pasta according to package instructions.
- While the pasta is cooking, add olive oil, balsamic vinegar, salt and pepper to a jar. Shake well to combine.
- Once pasta is finished cooking, drain and transfer to a large bowl.
- Pour in the balsamic vinaigrette and mix to combine.
- Add the proscuitto, sun dried tomatoes, pesto, pine nuts and burrata.
- If serving to a crowd, hold off on mixing since it is a beautiful pasta.
- If serving at home, toss and serve!
Notes
To make things easier, feel free to use 1/2-1c store bought balsamic vinaigrette dressing instead of making your own. The burrata, pesto and sundried tomatoes all contain sodium. I would hold off on adding any extra until you taste this first.
