Tortellini Caprese Pasta Salad
Summer pasta salads are a weekly thing in our home! This is one of my favorites. We don't eat tortellini often, and whenever we do, I am always reminded of how much I love it. This is refreshing, crisp and so summery for an easy weeknight dinner or something to bring to a barbecue!
Ingredients
- 20 oz20 oz20 oz Tortellini
- 10 oz10 oz10 oz Tomato, Cherry, halved

- 8 oz8 oz8 oz Mozzarella Pearls

- 1 cup1 cup1 cup Arugula
- 0.333 cup0.333 cup0.333 cup Basil, Fresh, chopped

- 0.25 cup0.25 cup0.25 cup Extra Virgin Olive Oil
- 2 Tbsp2 Tbsp2 Tbsp Organic Balsamic Glaze

- 2 Tbsp2 Tbsp2 Tbsp Garlic, minced

- 1 tsp1 tsp1 tsp Italian Seasoning

- 0.5 tsp0.5 tsp0.5 tsp Salt

- 0.5 tsp0.5 tsp0.5 tsp Black Pepper

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Cook tortellini according to package instructions.
- Prep all other ingredients.
- When tortellini is finished cooking, strain and rinse with cool water quickly to cool it off.
- Add tortellini to a medium bowl.
- Add in tomatoes, mozzarella, arugula, basil and garlic.
- Toss well to combine.
- Pour in the olive oil, balsamic glaze, and italian seasoning.
- Toss until everything is well coated.
- Serve room temperature or chilled.
