Summer pasta salads are a weekly thing in our home! This is one of my favorites. We don't eat tortellini often, and whenever we do, I am always reminded of how much I love it. This is refreshing, crisp and so summery for an easy weeknight dinner or something to bring to a barbecue!

Process

  1. Cook tortellini according to package instructions.
  2. Prep all other ingredients.
  3. When tortellini is finished cooking, strain and rinse with cool water quickly to cool it off.
  4. Add tortellini to a medium bowl.
  5. Add in tomatoes, mozzarella, arugula, basil and garlic.
  6. Toss well to combine.
  7. Pour in the olive oil, balsamic glaze, and italian seasoning.
  8. Toss until everything is well coated.
  9. Serve room temperature or chilled.
