Chimichurri Steak Pasta Salad
This is probably one of my top favorite summer pasta salads! It's different, easy and delicious. I used premade steak (I love the sous vide one from Costco) and The Spice House Green Chimichurri mix. Still fresh and delicious but just a little quicker and easier for weeknight dinners or to throw together before a party!
Ingredients
- 1 lb1 lb1 lb Rigatoni Pasta

- 10 oz10 oz10 oz Tomato, Cherry, halved

- 8 oz8 oz8 oz Mozzarella Pearls, or ciliegine, halved

- 1 cup1 cup1 cup Corn
- 1 cup1 cup1 cup Chimichurri, The Spice House mix
- 1.5 lb1.5 lb1.5 lb Skirt Steak, grilled

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Cook pasta according to package instructions.
- While pasta is cooking, prep ingredients.
- When pasta is done, add the pasta, mozzarella, tomatoes, corn, steak & chimichurri to a large bowl.
- Toss to combine well.
- Enjoy!
Notes
My recipe contains a lot of shortcuts - premade steak, a chimichurri mix. This makes it a lot easier! If you are marinating and grilling steak on your own, and making your own chimichurri sauce, I recommend allotting more time for your recipe!
