Cookie Dough Stuffed Dates
These cookie dough stuffed dates are a delicious and filling way to satisfy that sweet tooth with protein and fiber! I took the recipe from my cookie dough energy bites and used it to fill dates. It's that easy! If you like the sound of this but you aren't into dates, you can make the cookie dough energy bites on their own! - 1 cup1 cup1 cup Gluten-Free Rolled Oats

- 0.5 cup0.5 cup0.5 cup Creamy Peanut Butter

- 0.333 cup0.333 cup0.333 cup Pure Maple Syrup

- 0.25 cup0.25 cup0.25 cup Coconut Flakes, Unsweetened
- 0.25 cup0.25 cup0.25 cup Flaxseed Meal
- 0.333 cup0.333 cup0.333 cup Mini Chocolate Chips, Semi-Sweet

- 12 whole12 whole12 whole Medjool Dates, pitted

- Add all ingredients except dates to a bowl.
- Mix until just combined.
- If it seems thin or super sticky, refrigerate it for 10-20 minutes!
- Open and pit your dates.
- Stuff them with the cookie dough mixture until all your dough is used up.
