Chocolate Chip Skillet Cookie – Gluten-Free
Think of this as a large chocolate chip cookie, easily made in a skillet. You can make it using regular or gluten-free flour, mix up your chocolate chips, add in nuts or marshmallows if you want. Definitely a sweet treat everyone will love.
Ingredients
- 0.5 cup0.5 cup0.5 cup Butter, Unsalted

- 0.5 cup0.5 cup0.5 cup Granulated White Sugar

- 0.5 cup0.5 cup0.5 cup Light Brown Sugar
- 1 tsp1 tsp1 tsp Pure Vanilla Extract

- 111 Egg, large, beaten
- 1.5 cup1.5 cup1.5 cup Gluten-Free Measure for Measure Flour - King Arthur, or use your favorite flour
- 0.5 tsp0.5 tsp0.5 tsp Sea Salt

- 0.5 cup0.5 cup0.5 cup Dark Chocolate Chips

- 0.5 cup0.5 cup0.5 cup Milk Chocolate, chips

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Pre-heat the oven to 350°f.
- Melt the 1/2 stick of butter in a 10-inch skillet. You can brown the butter if desired.
- Add the white and brown sugar and stir to combine.
- Remove the skillet from the stovetop and let the mixture cool 5-10 minutes.
- In a small bowl add the egg and beat it, then slowly add a bit of the butter/sugar mixture to the egg and mix well to warm the egg.
- Add the egg and vanilla extract to the skillet and mix well.
- Add the flour, baking powder, and salt to the skillet and mix until the flour is fully incorporated into the mixture.
- Add the chocolate chips and marshmallows (if using) stir to combine. It's ok if some of the chocolate chips begin to melt.
- Spread the mixture out evenly in the skillet and top with a small handful of chocolate chips.
- Bake for 15-20 minutes until browned and cooked through.
- Once cooled sliced into pie shaped wedges or squares.
Notes
You can use a combination of chocolate chips or use all one kind (ie. all dark or semi-sweet, etc.) You can also add in 1/2 cup mini marshmallows if desired. Let the butter/sugar mixture cool a bit before adding the egg. To make sure the egg doesn't scramble. Just add the egg to a small bowl and a bit of the butter mixture to the egg to warm it up before adding it to the skillet.
