Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the almond flour, coconut flour, baking soda, and salt.
  3. In a separate large bowl, mix tahini, maple syrup, coconut sugar, vanilla extract, and egg until smooth and well-combined.
  4. Gradually add the dry ingredients to the wet mixture, stirring until a dough forms. Fold in the chocolate chips.
  5. Use a cookie scoop or tablespoon to portion out the dough onto the prepared baking sheet, leaving about 2 inches between cookies. Gently flatten each ball of dough with the back of a spoon.
  6. Bake for 10-12 minutes, or until the edges are golden brown. The cookies will be soft when they come out of the oven but will firm up as they cool.
  7. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack. Sprinkle with flaky sea salt if desired.
