Chocolate (Hidden) Veggie Muffins
If getting veggies into you or your child's diet is something you struggle with, these chocolate muffins with spinach and beets are a great solution. These muffins are amazing because not only can you not see the veggies, you also can’t taste them, so they are great for picky eaters!
I am not a beet fan, but I do know how good they are for you so I wanted to create recipes where they are there but you can’t taste them. So whether you like beets or not, these are for you!
Ingredients

- 2 cups2 cups2 cups Spinach, 1-2 handfuls
- 1 whole1 whole1 whole Pre-Cooked Beets
- 2 tsp2 tsp2 tsp Pure Vanilla Extract
- 1 cup1 cup1 cup Oat Flour

- 0.5 tsp0.5 tsp0.5 tsp Baking Soda
- 1 tsp1 tsp1 tsp Baking Powder

- 0.25 cup0.25 cup0.25 cup Dark Chocolate Chips

- Blend the first 5 ingredients together and pour into a bowl with the dry ingredients.
- Fold in the chocolate chips.
- Scoop into a lined muffin tin and bake at 350 for 15 min. Let cool for 10 min before removing from liners and enjoy!
