Chocolate (Hidden) Veggie Muffins (Edit recipe)

If getting veggies into you or your child's diet is something you struggle with, these chocolate muffins with spinach and beets are a great solution. These muffins are amazing because not only can you not see the veggies, you also can’t taste them, so they are great for picky eaters!

I am not a beet fan, but I do know how good they are for you so I wanted to create recipes where they are there but you can’t taste them. So whether you like beets or not, these are for you!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Blend the first 5 ingredients together and pour into a bowl with the dry ingredients.
  2. Fold in the chocolate chips.
  3. Scoop into a lined muffin tin and bake at 350 for 15 min. Let cool for 10 min before removing from liners and enjoy!
