This keto Oreo cake in a mug has a moist cake layer and a creamy filling that mimics the taste and texture of Oreo cookies. Plus, it’s made with simple ingredients that you probably already have in your pantry.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a small microwave-safe bowl or microwave-safe mug, melt the coconut oil for the mug cake. Add the egg and vanilla extract and whisk well.
- Add the dry ingredients: coconut flour, Swerve, cocoa powder, baking powder and salt, and mix well until you have a smooth keto batter.
- Microwave for 90 seconds or until a toothpick inserted in the center comes out clean. The cooking time will depend on the power of your microwave.
- Let the mug cake cool slightly and then cut it into four round slices.
- In another small microwave-safe bowl, melt the coconut oil for the filling. Add the almond milk, powdered Swerve, and salt and whisk well. You can use a food processor if you prefer.
- Take two slices of the mug cake and spread half of the filling on one slice. Place the other slice on top and press gently to make a sandwich. Repeat with the remaining slices and filling.*
Notes
Use a microwave-safe cup for even cooking. Substitute almond milk with vegetable oil for a richer filling. Add a splash of lemon juice for a slight tang in the filling, enhancing the chocolate flavor. Prefer a smoother cake? Use unsweetened cocoa powder for a silkier taste. Swap Swerve with a different sweetener like monk fruit. For extra indulgence, sprinkle chopped keto Oreo cookies or add a dollop of almond butter on top.
