  1. In a small microwave-safe bowl or microwave-safe mug, melt the coconut oil for the mug cake. Add the egg and vanilla extract and whisk well.
  2. Add the dry ingredients: coconut flour, Swerve, cocoa powder, baking powder and salt, and mix well until you have a smooth keto batter.
  3. Microwave for 90 seconds or until a toothpick inserted in the center comes out clean. The cooking time will depend on the power of your microwave.
  4. Let the mug cake cool slightly and then cut it into four round slices.
  5. In another small microwave-safe bowl, melt the coconut oil for the filling. Add the almond milk, powdered Swerve, and salt and whisk well. You can use a food processor if you prefer.
  6. Take two slices of the mug cake and spread half of the filling on one slice. Place the other slice on top and press gently to make a sandwich. Repeat with the remaining slices and filling.*
