Chocolate S’More Krispies
I woke up thinking about my mom today and since I’ve been hankering for some “rice krispies” , I indulged a bit and enjoyed this long time family favorite. She used to make them all the time, so we enjoyed them often when I was growing up. I definitely needed this warm fuzzy today! It’s about as close to what I remember with a chocolatey twist.
Ingredients
- 3 cups3 cups3 cups Vanilla Marshmallows (Sweet Apricity), or your favorite variety
- 3 Tbsp3 Tbsp3 Tbsp Salted Butter, can sub ghee
- .25 tsp.25 tsp.25 tsp Pure Vanilla Extract
- .125 tsp.125 tsp.125 tsp Redmond Real Salt
- 2.5 cups2.5 cups2.5 cups Brown Rice Cacao Crisps, I used, Nature's Path Koala Crisps
- .25 cup.25 cup.25 cup Honey Cinnamon Sweet Thins (Simple Mills)
- .25 cup.25 cup.25 cup Pascha Organic Vegan White Baking Chips

- Line a 5½” x 8½” pan with parchment paper.
- Pour cereal, honey crackers and white chips into a large bowl, stir then set aside.
- Melt butter in a large stock pot, then add marshmallows and stir until melted. Add
- vanilla and salt, stirring to combine.
- Pour melted ingredients over cereal mixture in the bowl and stir to coat.
- Spoon/pour into the prepared pan, adding additional white chips/honey crackers if desired. Press down slightly (not too much) then allow to cool.
- Slice when ready to enjoy!
