chopped cobb salad sandwich
all the goodies from a cobb salad made into a delicious open-faced sandwich! these bad boys are STACKED! protein-rich, nutrient dense, & an easy peasy lunch!
Ingredients
- Egg, Hard Boiled
- oven-baked bacon (click for recipe)
- Arugula, or greens of choice
- Avocado, diced
- Tomato, Grape, diced
- Feta Cheese
- Tuna, Canned, can sub chicken or other protein

- greek yogurt "honey" mustard (click for recipe)
- homemade grain-free bread (click for recipe)
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- finely cut up all of your ingredients.
- to a bowl, add all ingredients except bread.
- toss salad ingredients with greek yogurt “honey” mustard.
- add a hearty scoop of chopped cobb salad to a slice of bread, then add bread to a skillet over medium heat for 3-4 minutes to “toast” the bottom.
- if you have extra mixture, feel free to scoop up with your favorite chips, veggies, or a spoon!
