chopped cobb salad sandwich
all the goodies from a cobb salad made into a delicious open-faced sandwich! these bad boys are seriously full of protein, nutrients, & are flavorful as all get out. a must try quick & easy lunch!
Ingredients
- 1 whole1 whole1 whole Egg, Hard Boiled
- 111 easy baked bacon (click for recipe)
- 0.25 cup0.25 cup0.25 cup Arugula, or greens of choice
- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Avocado, diced
- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Tomato, Grape, diced
- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Feta Cheese
- 3 - 4 oz3 - 4 oz3 - 4 oz Tuna, Canned, can sub chicken or other protein
- 2 - 4 Tbsp2 - 4 Tbsp2 - 4 Tbsp cobb salad + "honey" mustard dressing (click for recipe), the "honey mustard" from this recipe
- 2 pieces2 pieces2 pieces homemade grain-free bread (click for recipe)
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- finely cut up all of your ingredients.
- to a bowl, add all ingredients except bread.
- toss salad ingredients with greek yogurt “honey” mustard.
- add bread to a skillet over medium heat for 2-3 minutes to “toast” bottom of each slide of bread.
- either make 2 open-faced sandwich or one sandwich by adding cobb salad mixture to the bread.
