churro cookie crumble protein bark
taking your traditional churro to the NEXT level with this bark 😮💨✨
the base is stacked with better-for-you crunch: masa’s beef tallow churro chips (for that authentic fried-in-good-fat flavor), catalina crunch cinnamon toast cereal (my favorite flavor), & chunks of BTR cinnamon cashew crunch protein + superfood bars baked into a buttery protein toffee that caramelizes into every bite 🤌
then because we don’t do basic… I crumble my churro protein cookie dough over a thick, ooey-gooey chocolate caramel collagen ganache so you still get that cinnamon-sugar churro energy on top.
it’s crunchy, cinnamony, chocolatey, salty-sweet, high-protein, lower sugar, & so good street carts should be selling this!
Ingredients

base
- 3 oz3 oz3 oz Traditional Tortilla Chips - Masa, I used the churro flavor

- 5 oz5 oz5 oz Cinnamon Toast Protein Cereal - Catalina Crunch

- 222 Cinnamon Cashew Crunch Protein + Superfood Bar - B.T.R. Nation

protein toffee
- 0.25 cup0.25 cup0.25 cup Butter, Unsalted

- 0.5 cup0.5 cup0.5 cup Golden Monkfruit Sweetener (with Allulose) - Lakanto

- 0.5 cup0.5 cup0.5 cup Vanilla Collagen Peptides Powder - Further Food

- 2 Tbsp2 Tbsp2 Tbsp Cashew Butter

- 1 tsp1 tsp1 tsp Pure Vanilla Extract

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- make a batch of my churro protein cookie dough balls, but only use 1-2 t of water to reach more of crumbly consistency, rather than rolling into balls.
- freeze crumble until ready to add in below.
- preheat oven to 350.
- to a sheet pan, add protein cereal, masa churro chips, & BTR bars.
- in a sauce pan over medium heat, melt butter & brown.
- stir in remaining “toffee” ingredients & mix until everything is dissolved.
- pour toffee mixture over cereal, then bake for 8-10 minutes.
- remove from oven.
- to make chocolate caramel collagen ganache: melt chocolate caramel chips → mix in chocolate collagen peptides, & water until reaches a nice fudgy consistency
- cool for 10 minutes, then sprinkle churro crumble on top & lightly press in.
- allow to cool, then place in the fridge or freezer for 15-30 minutes before breaking into bark pieces.
