Cold & Flu Fighting Chicken Noodle Soup
If you feel like everyone around you is getting sick, same. I am terrified of catching what everyone has - the flu, norovirus, a cold that is knocking people out for days. No thank you!!!! I have whipped this soup up twice in the past 4 days and will probably make it again. It's an elevated chicken noodle soup with some extra immune supporting ingredients that also makes this soup so tasty!
Ingredients
- 2 lb2 lb2 lb Chicken Breasts, Boneless Skinless
- 2 Tbsp2 Tbsp2 Tbsp Extra Virgin Olive Oil
- 1 head1 head1 head Garlic, about 5-6 cloves, sliced
- 1 pieces1 pieces1 pieces Ginger Root, about 2 inches, minced
- 0.5 whole0.5 whole0.5 whole Vidalia Onion
- 2 whole2 whole2 whole Lemon, juiced
- 4 whole4 whole4 whole Carrots, trimmed and peeled, sliced thin
- 5 whole5 whole5 whole Celery, sliced thin
- 2 cups2 cups2 cups Potatoes, Baby, cut into fourths
- 2 cups2 cups2 cups Baby Spinach
- 0.75 cup0.75 cup0.75 cup Orzo Pasta
- 0.5 cup0.5 cup0.5 cup Corn
- 6 cups6 cups6 cups Chicken Broth, Low Sodium
- 1 cup1 cup1 cup Water
- 0.5 tsp0.5 tsp0.5 tsp Basil, Dried
- 0.5 tsp0.5 tsp0.5 tsp Oregano, Dried
- 0.5 tsp0.5 tsp0.5 tsp Sea Salt, or to taste
- 0.5 tsp0.5 tsp0.5 tsp Black Pepper

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Chop and prepare all of your ingredients in advance and set aside.
- In a large pot, add olive oil over medium heat.
- Add onion and garlic and saute until fragrant.
- Add in ginger and quickly saute.
- Add carrots and celery to the pot and mix together.
- Place chicken breast in pot and cook on both sides until you no longer see pink.
- Add in broth, water, corn, potatoes, basil, oregano, salt, pepper, and crushed red pepper flakes. Give it a good stir and bring to a simmer.
- Let simmer for 10 minutes. Remove chicken and shred with 2 forks. Return shredded chicken to the pot.
- Add in orzo.
- Bring to a boil and then lower to a simmer.
- Add in fresh spinach and adjust taste here. I am conservative with salt so feel free to add more.
- Serve with fresh grated parmesan and enjoy!
Notes
I am very conservative with my sodium in soups. I usually opt for lower sodium or sodium free broth and add my own. I find I consume less and feel better when I add it in myself, so feel free to add salt to your taste and liking here!
