My Mom’s Zucchini Pie
Here is another one of my mom's famous summer recipes that we, our family, and friends grew up eating! It's simple to make but looks and feels like she spent a lot of time on it. The best part about it is the taste of the fresh home grown summer zucchini, and the fluffy texture. It's a summer favorite for sure, so be sure to make it asap!
Ingredients
- 4 whole4 whole4 whole Eggs
- 1 whole1 whole1 whole White Onion, small, grated
- 1 cup1 cup1 cup Bisquick
- 0.5 cup0.5 cup0.5 cup Parmesan Cheese, grated

- 0.5 cup0.5 cup0.5 cup Extra Virgin Olive Oil
- 1 tsp1 tsp1 tsp Oregano, Dried

- 1 tsp1 tsp1 tsp Parsley, Dried

- 3 cup3 cup3 cup Zucchini, sliced thin, we use a mandolin
- 1 pinch1 pinch1 pinch Black Pepper

- 0.5 cup0.5 cup0.5 cup Mozzarella, shredded

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350f.
- Prepare an 8x8 baking dish with olive oil spray.
- In a large mixing bowl, combine all ingredients.
- Mix well until everything is coated.
- Transfer the mixture to an 8x8 baking dish and smooth it out.
- Bake for 50 minutes. If a knife doesn't come out clean, put it back in for 10 more. It really depends here how hot your oven is!
- Remove from the oven and let cool a little.
- Cut into small squares.
- Serve warm or at room temperature.
- Enjoy!
