Copycat Panera Fuji Apple Chicken Salad with Candied Pecans
The fuji apple chicken salad from Panera bread is one of my absolute favorites! I can't believe I haven't tried to make this one at home before, but it did not disappoint! I can't get enough of the sweet & tangy apple dressing
Ingredients

- 0.25 whole0.25 whole0.25 whole Red Onion, thinly sliced
- 0.5 cup0.5 cup0.5 cup Gorgonzola Cheese, omit to keep it dairy free
- 1 lb1 lb1 lb Pasture-raised Chicken Breasts - US Wellness Meats

- 1 tsp1 tsp1 tsp Apple Cider Vinegar
- 1 tsp1 tsp1 tsp Garlic Powder

- 1 tsp1 tsp1 tsp Onion Powder

- 0.5 tsp0.5 tsp0.5 tsp Paprika

- 0.5 tsp0.5 tsp0.5 tsp Thyme, Dried

- .5 tsp.5 tsp.5 tsp Oregano, Dried

- 0.5 tsp0.5 tsp0.5 tsp Sea Salt

- 0.25 tsp0.25 tsp0.25 tsp Brown Monkfruit and Erythritol Sweetener (Brown Sugar Replacement) - Lakanto

- 2 Tbsp2 Tbsp2 Tbsp Butter, Salted, or coconut oil

- 1 Tbsp1 Tbsp1 Tbsp Coconut Sugar with Monk Fruit - Lakanto

- 2 Tbsp2 Tbsp2 Tbsp Honey

- .5 tsp.5 tsp.5 tsp Dijon Mustard
- 1 whole1 whole1 whole Apple, Fuji, small, diced
- 0.5 tsp0.5 tsp0.5 tsp Salt and Pepper
- .5 tsp.5 tsp.5 tsp Garlic Powder

- .5 tsp.5 tsp.5 tsp Onion Powder

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Blend your dressing ingredients together until smooth, and then strain. set aside in the fridge
- season your chicken breast and bake at 400 for 25 minutes, or until internal temp is 165F, or grill your chicken several minutes per side
- Make candied pecans- heat a small skillet, add butter and melt, add sweetener and whisk, then stir your pecans in to fully coat. Sprinkle with more sweetener if desired, depending on your desired level of sweetness
- Set your pecans aside on a baking sheet lined with parchment paper to let cool
- Assemble your salad with greens, finely sliced onion, apple chips, candied pecans, chicken, and then toss in dressing
- Enjoy!
