Mediterranean Couscous Salad
Literally, obsessed with this one. So fresh and simple, and so delish. Perfectly cooked pearl couscous, loads of fresh veggies & herbs, Greek dressing, and tangy, salty feta.
Ingredients
- 1 cup1 cup1 cup Pearl Couscous
- 0.5 whole0.5 whole0.5 whole Red Onion, finely diced
- 0.5 whole0.5 whole0.5 whole Bell Pepper, not green, finely diced
- 0.5 whole0.5 whole0.5 whole English Cucumber, seeded & diced
- 1 whole1 whole1 whole Roma Tomato, seeded & diced
- 2 whole2 whole2 whole Green Onion (Scallion), thinly sliced

- 2 Tbsp2 Tbsp2 Tbsp Dill, Fresh, chopped
- 0.25 cup0.25 cup0.25 cup Parsley, finely chopped

- 0.5 cup0.5 cup0.5 cup Greek Salad Dressing, I used Le Grec
- 0.75 cup0.75 cup0.75 cup Feta Cheese, crumbled. I didn't measure so this is approximate. Add as much as your heart desires.
- 0.5 tsp0.5 tsp0.5 tsp Red Pepper Flakes

- 0.5 tsp0.5 tsp0.5 tsp Oregano, Dried

- 1 whole1 whole1 whole Himalayan Pink Salt, See Recipe

- 1 whole1 whole1 whole Black Peppercorns, Ground Fresh, See Recipe

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Cook your couscous according to package directions until tender and perfectly cooked. Strain & rinse. Set aside while you dice up all of your veggies.
- Once your couscous is cooled, add it to a mixing bowl along with all of the ingredients including the dressing. Toss until everything is combined nicely. Season with salt & pepper, cover, and refrigerate for a minimum of 30 minutes to come together. Taste again prior to service and season to taste if needed. I didn't find it needed much salt after my initial season and some time in the fridge. I preferred it on the fresh er side, especially since the feta & dressing have salt.
- Serve and ENJOY!
- Remaining salad can be stored in an airtight container for 4 days. This recipe is also super easy to double if you want to enjoy it multiple times over several days.
Notes
- Prep time includes 30 Min chill time in the refrigerator.
