Meatloaf With Roasted Red Pepper Sauce (Edit recipe)

Growing up I always drowned my meatloaf with ketchup because it was so dry! Sound familiar? This easy meatloaf is turned up a notch with a roasted red pepper & tomato sauce.  The winner is the ooey gooey head of roasted garlic! You can make this moist & delicious recipe with lean ground beef or turkey.  The trick is to soak your breadcrumbs for 5 minutes in milk before adding the rest of your ingredients.  To round out this dinner, I made a one pan roasted gourmet potatoes with asparagus.  Yum!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Roast tomatoes, peppers and garlic at 400 degrees 40 min till browned slightly. After cool, drop in food processor and carefully squeeze out garlic once cooled, add olive oil, lemon and balsamic and blend till smooth. For meatloaf soak bread crumb and milk for 5 min. Sauté in pan on med onion and garlic and mix in parsley, oil, Worcestershire and ketchup and stir for 1 min. Add eggs to breadcrumbs mixture and stir. Add rest of ingredients and mix. Make loaf and spread ketchup thinly on top. Roast at 400 degrees 40-50 till internal 170 degrees F. Serve warm and enjoy!
