Corn, Tomato and Avocado Salad
I love a good side salad, don't you?! This one is super colorful and super easy to make. What I also love about this is that you can add whatever flavors and seasonings you want to it. I kept it simple for a light summer salad, but feel free to play around with it. I made this for a simple salad side for our dinner when grilling one night, but I would definitely make this for any barbecues too!
Ingredients
- 1 lb1 lb1 lb Corn, niblets, cooked
- 1 cup1 cup1 cup Tomato, Grape, halved
- 1 whole1 whole1 whole Avocado, cubed
- 0.333 cup0.333 cup0.333 cup Red Onion, chopped small
- 0.25 cup0.25 cup0.25 cup Parsley, chopped small

- 2 whole2 whole2 whole Lime, juiced

- 2 Tbsp2 Tbsp2 Tbsp Extra Virgin Olive Oil
- 0.5 tsp0.5 tsp0.5 tsp Himalayan Pink Salt

- 0.5 tsp0.5 tsp0.5 tsp Black Pepper

- Cook your corn how you like it - stovetop, grilled, etc!
- While your corn is cooking, prep the rest of the ingredients, getting them chopped and such.
- Once everything is finished, add the corn, tomato, avocado, red onion, parsley, lime, olive oil, salt and pepper to a large bowl.
- Toss well to combine.
- Adjust any seasonings or flavors you'd like!
- Serve fresh or chilled.
