Cranberry Almond Kodiak Muffins!
These Cranberry Almond Kodiak Muffins are a wholesome way to start the day—soft, flavorful, and packed with protein to keep you going. Made with Kodiak mix and sweet-tart cranberries soaked in orange juice, each bite has that perfect balance of hearty and refreshing. I used Lark Ellen Farm’s Simply Sprouted almonds for a delicious crunch and added nutrition that really takes these muffins up a notch. They’re easy to make, freezer-friendly, and the perfect grab-and-go breakfast for busy mornings or after-school snacks.
Ingredients
- 222 Eggs

- 2 Tbsp2 Tbsp2 Tbsp Light Brown Sugar
- 1 tsp1 tsp1 tsp Vanilla Extract

- 0.5 cup0.5 cup0.5 cup Milk

- 1.5 cup1.5 cup1.5 cup Buttermilk Power Cakes - Kodiak
- 1 tsp1 tsp1 tsp Baking Powder

- 0.666 cup0.666 cup0.666 cup Craisins, Original
- 2 Tbsp2 Tbsp2 Tbsp Orange Juice, No pulp
- 1 cup1 cup1 cup Orange Juice, No pulp, to soak craisins in

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- About an hour before making your muffins, soak your craisins in orange juice.
- Grease your silicone muffin pan with oil, or line it with muffin liners.
- Preheat your oven to 350 degrees, then get started mixing.
- Add all the ingredients except for the craisins and almonds to a bowl.
- Mix well with an electric mixer or whisk.
- Next, strain out your craisins and mix them into the muffin batter.
- In a Ziploc bag, use a mallet to crush your almond slices.
- Reserve some crushed almonds for muffin garnish, and mix the rest into the muffin batter.
- Scoop the muffin batter into your muffin pan.
- Bake for about 20 minutes.
- Use a toothpick to make sure they are thoroughly cooked.
- Allow to set in the pan for ten minutes before moving to a wire rack to fullly cool
