Creamy Lemon Basil Spaghetti Squash
This is another recipe that I have wanted to post for a while. I love pasta with red sauce but sometimes I really want a creamy and delicious pasta dish. Basically avocado is the most brilliant piece of fruit EVER! I really have no idea what I would do without it.
I started making this creamy lemon basil sauce a couple months ago and basically put it on this that and everything. It totally satisfied my desire for creamy comfort food without feeling terrible after.
Ingredients
- 1 whole1 whole1 whole Avocado, for the sauce
- 6 whole6 whole6 whole Garlic, for the sauce
- 1 cup1 cup1 cup fresh Basil, for the sauce
- 1 Tbsp1 Tbsp1 Tbsp Lemon zest, for the sauce
- 0.333 cup0.333 cup0.333 cup Lemon Juice, for the sauce
- 0.25 cup0.25 cup0.25 cup Extra Virgin Olive Oil, for the sauce, + 2 tsp for the pasta
- 0.125 tsp0.125 tsp0.125 tsp Cayenne Pepper, optional and for the sauce
- 0.5 tsp0.5 tsp0.5 tsp Ground Fresh Black Peppercorns, for the sauce, + 1/2 tsp for the pasta
- 0.5 tsp0.5 tsp0.5 tsp Sea Salt, for the sauce, + 1/2 tsp for the pasta
- 3 cups3 cups3 cups baked Spaghetti Squash, for the pasta
- 1 cup1 cup1 cup Kale, chopped and for the pasta
- 8 oz8 oz8 oz Yellow Cherry Tomatoes, for the pasta

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Place all of the sauce ingredients in a food processor or blender and puree until smooth.
- Heat a large skillet over medium-high heat and add the olive oil. Once the oil is hot add the tomatoes and sautu00e9 about two minutes.
- Add the rest of the ingredients and sautu00e9 for another 5 minutes. Add about u00bd cup of the sauce and mix thoroughly.
- Serve as is or add some of your favorite protein or vegetables.
Notes
You can substitute any of your favorite pasta for the spaghetti squash in this recipe.
