Creamy Lemon Pasta with Tomatoes and Basil (Edit recipe)

A simple pasta dinner made with a creamy lemon sauce filled with garlic, fresh basil and cherry tomatoes. This simple pasta can be thrown together in a matter of minutes and is perfect for a quick weeknight meal. You can get creative and include any of your favorite vegetables or protein.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Heat a large skillet to medium high heat.
  2. Add the olive oil and once hot, add the cherry tomatoes. Blister for 1-2 minutes or until slightly softened. Remove tomatoes from the skillet and set aside.
  3. Add the butter to the hot skillet. Then add the minced garlic, lemon zest and red pepper flakes and cook until fragrant. 30-60 seconds.
  4. Next add the lemon juice, cream, salt and instant bone broth pack (if using), parmesan cheese and chopped basil.
  5. Whisk together and let it gently simmer.
  6. Add the cooked spaghetti noodles to the skillet and toss to combine. This is not an overly saucy dish but it should coat all the noodles. Add the cherry tomatoes and toss.
  7. Serve immediately and garnish with more shredded parmesan and fresh basil.

Notes

This not an overly creamy dish. The sauce is meant to coat the noodles but they won’t be swimming in cream sauce. You can always increase the amount of sauce if you wish it to have more.

Feel free to get creative and add any of your favorite veggies. Just sauté them with the cherry tomatoes. I often add green beans, kale, squash or peppers.

This is also great served with some chicken on shrimp.

If you can't find the instant bone broth you can omit it.
