Creamy Chicken with Spinach & Mushrooms
Another one pan winner winner chicken dinner! This Creamy Mushroom & Bacon Chicken is so delicious and so easy too! whats not to love, chicken, bacon, mushrooms and spinach all in a dreamy sauce. You can serve it with mashed potatoes or cauliflower rice to soak up all the yummy sauce. Your whole family will love it!
Ingredients
- 6 - 8 pieces6 - 8 pieces6 - 8 pieces Boneless Skinless Chicken Thigh
- 1 cup1 cup1 cup Onion, diced
- 4 cloves4 cloves4 cloves Garlic, minced
- 8 oz8 oz8 oz Bacon, cut in 1" pieces
- 8 oz8 oz8 oz Baby Bella Mushrooms, sliced
- 5 oz5 oz5 oz Baby Spinach
- 24 oz24 oz24 oz Beef Broth, I like Kettle & Fire
- 0.5 cup0.5 cup0.5 cup Coconut Cream, just the white hard part
- 2 Tbsp2 Tbsp2 Tbsp Balsamic Vinegar
- 0.5 bunch0.5 bunch0.5 bunch Flat Leaf Parsley, chopped
- 1 tsp1 tsp1 tsp dried Thyme
- 1 tsp1 tsp1 tsp Paprika
- 1 tsp1 tsp1 tsp Salt
- 1 tsp1 tsp1 tsp Black Pepper
- 1 Tbsp1 Tbsp1 Tbsp Arrowroot Powder, mixed with 1 tbsp water, if needed to thicken sauce

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Cook bacon in a large skillet till crisp, move to plate lined with paper towels, do not drain fat
- Mix spice in bowl & divide in half
- Toss chicken with half the spice
- On medium high heat cook chicken 5-7 minutes per side, move to plate & cover with foil
- Add onions & sauté 3 minutes
- Add mushrooms, cook till browning
- Add garlic, stir one minute
- Add broth & bring to a boil
- Lower heat to medium
- Add coconut cream & stir well
- Add chicken back to pan
- Add balsamic & remaining spice, stir & simmer 10 minutes
- If not thick enough add arrowroot slurry
- Add spinach & stir till wilted
- Add bacon crumbles & parsley
