Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Add 1 cup of rice and 2 cups of water to a medium saucepan. Cook until the rice is tender and fluffy. Remove from the heat and set aside.
  2. Add ground beef to a large skillet over medium-high heat. Break the beef apart and cook until it begins to brown.
  3. Once the beef has started browning, add 2–3 cloves of minced garlic, salt, onion powder, and Chinese five spice. Stir everything together and continue cooking.
  4. Turn the heat up slightly and let the ground beef cook undisturbed for a few minutes at a time so it develops those crispy, caramelized edges. Stir and repeat until the beef is browned and crispy to your liking. If there's an excessive amount of grease, you can drain some before crisping. (I prefer to leave some grease so it doesn't dry my beef out).
  5. In a separate saucepan, combine beef bone broth, coconut milk can, creamy peanut butter, tamari, sesame oil, rice vinegar, coconut sugar, Chinese five spice, garlic powder, and a pinch of salt (to taste).
  6. Whisk everything together over medium heat until the peanut butter is completely incorporated. Bring the broth to a gentle simmer and cook for about 5–10 minutes, stirring occasionally, until everything is smooth, creamy, and well combined. Taste and adjust the salt (or vinegar) if needed.
  7. Add some cooked rice to a bowl, add a generous helping of crispy ground beef, then ladle the warm coconut bone broth around the rice and beef.
  8. Top with sliced cucumber, sesame seeds, and a drizzle of sriracha. Serve immediately!
