Tuna Salad
- 1 whole1 whole1 whole Tuna, Canned
- 0.25 cup0.25 cup0.25 cup Plain Greek Yogurt
- 1 tsp1 tsp1 tsp Dijon Mustard
- 2 tsp2 tsp2 tsp Lemon Juice
- 1 tsp1 tsp1 tsp Dill, Dried

- 0.5 tsp0.5 tsp0.5 tsp Garlic Powder

- 1 pinch1 pinch1 pinch Salt and Pepper

- 1 pinch1 pinch1 pinch Lemon Zest, for topping

- Boil the potatoes in salted water for 15–20 minutes, or until fork tender. Drain and let cool slightly.
- Preheat oven to 425°F and line a baking sheet with parchment paper.
- Place the potatoes on the baking sheet and gently smash each one to about ½-inch thick using the bottom of a glass.
- Drizzle with avocado oil and season with garlic powder, rosemary, thyme, salt, and pepper.
- Bake for 30–35 minutes, flipping halfway through, until golden brown and crispy.
- While the potatoes bake, make the tuna salad by mixing together the tuna, Greek yogurt, Dijon mustard, lemon juice, dried dill, garlic powder, salt, and pepper until creamy.
- Top each potato with a spoonful of tuna salad.
- Garnish with fresh lemon zest.
