Crunchy Pistachio and Pear Salad
This crunchy pistachio and pear salad is the perfect recipe to make as the weather warms up. It's refreshing, is bursting with flavour and so much texture, and great to enjoy as a side. Filled with crunchy chopped pistachios, chewy dried pears, pomegranate seeds, mixed greens, shallots, and so much more!
Ingredients
For the Salad
- 2 bunch2 bunch2 bunch Lettuce, Spring Mix Salad Greens, or any lettuce of your choice
- 1 whole1 whole1 whole Shallot, diced
- 2 whole2 whole2 whole Green Onion (Scallion), chopped

- 5 whole5 whole5 whole Pear, Bartlett, dried pear, any kind - chopped into pieces
- 0.25 cup0.25 cup0.25 cup Pistachios, Roasted, chopped (measure 1/4 cup whole)
- 0.5 whole0.5 whole0.5 whole Pomegranate, seeds from 1/2 the pomegranate
- 3 Tbsp3 Tbsp3 Tbsp Dairy-Free Cheese Feta Crumbles - Follow Your Heart
- 1 whole1 whole1 whole Pear, Bartlett, cut into thin slices, to top your salad
For the Dressing
- 3 Tbsp3 Tbsp3 Tbsp Extra Virgin Olive Oil
- 0.5 Tbsp0.5 Tbsp0.5 Tbsp Apple Cider Vinegar
- 1 Tbsp1 Tbsp1 Tbsp Tahini
- 1 pinch1 pinch1 pinch Salt and Pepper, to taste
- 1 tsp1 tsp1 tsp Parsley, Dried

- To a large plate or bowl, add your lettuce.
- Top with diced shallots, green onions, chopped dried pears, chopped pistachios, pomegranate, and crumbled feta. Carefully place your fresh pear slices on top of the salad.
