Cumin Roasted Carrots with Tahini & Yogurt Sauce
If you’ve never roasted carrots with cumin, you’re in for a treat. These are warm, cozy, and get even better with a creamy tahini drizzle and herby yogurt sauce. Basically the side dish that steals the show all year long!
Ingredients
Carrots
- 1 lb1 lb1 lb Rainbow Carrots
- 1 Tbsp1 Tbsp1 Tbsp Extra Virgin Olive Oil

- 1 tsp1 tsp1 tsp Organic Ground Cumin - The Spice Lab

- .5 tsp.5 tsp.5 tsp Paprika

- 1 pinch1 pinch1 pinch Salt and Pepper
Tahini Sauce
- 2 Tbsp2 Tbsp2 Tbsp Tahini
- 1 Tbsp1 Tbsp1 Tbsp Lemon Juice
- 1 Tbsp1 Tbsp1 Tbsp Almond Milk, to thin
- 1 pinch1 pinch1 pinch Sea Salt

Yogurt Herb Sauce
- .5 cup.5 cup.5 cup Organic Coconut Yogurt, Plain - Cocojune
- 1 Tbsp1 Tbsp1 Tbsp Extra Virgin Olive Oil

- 1 Tbsp1 Tbsp1 Tbsp Lemon Juice
- .5 tsp.5 tsp.5 tsp Garlic Powder

- 1 tsp1 tsp1 tsp Dill, Dried

- 1 tsp1 tsp1 tsp Parsley

- 1 pinch1 pinch1 pinch Salt and Pepper

- Roast the Carrots
- Preheat oven to 400°F (200°C).
- Toss carrots with oil, cumin, paprika, salt & pepper.
- Roast for 25–30 minutes, flipping halfway, until tender and golden on the edges.
- Make the Sauces
- For the tahini drizzle: whisk tahini, lemon juice, and milk until smooth and pourable.
- For the yogurt herb sauce: mix yogurt, oil, lemon, garlic, and herbs in a small bowl.
- Plate the roasted carrots, drizzle with tahini, then spoon or swipe the herby yogurt sauce on the side or over top.
- Optional: sprinkle with sesame seeds, hemp seeds, or more tahini sauce
