If you’ve never roasted carrots with cumin, you’re in for a treat. These are warm, cozy, and get even better with a creamy tahini drizzle and herby yogurt sauce. Basically the side dish that steals the show all year long!

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Roast the Carrots
  2. Preheat oven to 400°F (200°C).
  3. Toss carrots with oil, cumin, paprika, salt & pepper.
  4. Roast for 25–30 minutes, flipping halfway, until tender and golden on the edges.
  5. Make the Sauces
  6. For the tahini drizzle: whisk tahini, lemon juice, and milk until smooth and pourable.
  7. For the yogurt herb sauce: mix yogurt, oil, lemon, garlic, and herbs in a small bowl.
  8. Plate the roasted carrots, drizzle with tahini, then spoon or swipe the herby yogurt sauce on the side or over top.
  9. Optional: sprinkle with sesame seeds, hemp seeds, or more tahini sauce
