Dill Pickle Pasta Salad
Summer is around the corner, and I'm ready for all of the picnics and aaall the yummy side-dishes! Personally pasta salad is always my go-to in the warmer weather, and this Dill Pickle Pasta Salad hits the spot. It's fresh, herby, and tangy in the best way. Serve this alongside grilled chicken, burgers, etc. for the perfect summer meal!
Ingredients
- 1 cup1 cup1 cup Plain Greek Yogurt
- 1 Tbsp1 Tbsp1 Tbsp Dijon Mustard
- 2 Tbsp2 Tbsp2 Tbsp Dill Pickle Juice

- 1 - 2 cloves1 - 2 cloves1 - 2 cloves Garlic, finely minced

- 0.25 tsp0.25 tsp0.25 tsp Black Pepper

- 0.250.250.25 Red Onion, thinly sliced
- 0.5 cup0.5 cup0.5 cup shredded carrots
- 3 - 43 - 43 - 4 Dill Pickle Spears, chopped; about 3/4 cup
- 0.25 cup0.25 cup0.25 cup Dill, Fresh, chopped
- 0.25 cup0.25 cup0.25 cup Parsley, chopped

- 12 oz12 oz12 oz Gluten-Free Farfalle Pasta - Jovial Foods, or any pasta of choice

- Add yogurt, dijon mustard, pickle brine, garlic, and black pepper to a large mixing bowl. Mix to combine combine completely.
- Cook pasta according to package directions, a bit al dente. Drain and rinse well in cool water.
- Add pasta to mixing bowl with red onion, carrots, chopped pickles, dill, and parsley. Mix to combine and coat completely.
- Serve and enjoy! Store extras in an air-tight container in the fridge.
