Dilly Salmon Patties (Paleo/Whole30/Gluten Free)
If you find yourself with some leftover salmon, these little patties are a huge win! Pairing that salmon with fresh dill and lemon is literally a win and will have your taste buds dancing. Enjoy these patties with the tasty tartar sauce also included in this recipe. It's easier to make than you think! I had my sweet friend Alli, of @allisappetite - who is also here on FoodSocial, sample this recipe as I was creating it and she and her hubby enjoyed them so much! When you're ready to enjoy, definitely add a squeeze of fresh lemon.
Ingredients
salmon patty
- 2 cups2 cups2 cups Wild Caught Salmon Filet, cooked & flaked - can sub canned salmon
- .25 cup.25 cup.25 cup Avocado Oil Mayonnaise
- 2 whole2 whole2 whole Green Onion (Scallion), ends removed, thinly sliced
- 2 Tbsp2 Tbsp2 Tbsp Red Onion, finely diced
- 1 whole1 whole1 whole Lemon zest, zest of 1 lemon
- 1 Tbsp1 Tbsp1 Tbsp fresh Dill, finely chopped
- .5 tsp.5 tsp.5 tsp Balanced Bites Garlic Lemon Pepper Blend, or lemon pepper of choice
- .5 tsp.5 tsp.5 tsp Garlic Powder
- .125 tsp.125 tsp.125 tsp Fish Sauce, I like Red Boat variety
- 3 Tbsp3 Tbsp3 Tbsp Cassava Flour
- 1 whole1 whole1 whole Egg, room temperature
tarter sauce
- .5 cup.5 cup.5 cup Avocado Oil Mayonnaise
- 2 - 3 Tbsp2 - 3 Tbsp2 - 3 Tbsp Dill Pickle Slices, finely chopped
- 1 Tbsp1 Tbsp1 Tbsp Lemon Juice
- 1 whole1 whole1 whole Green Onion (Scallion), end removed, thinly sliced
- 1 tsp1 tsp1 tsp fresh Dill, finely chopped
- .25 tsp.25 tsp.25 tsp Sea Salt
garnish
- 1 whole1 whole1 whole Lemon, sliced into wedges for serving

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a medium sized bowl, add salmon, mayo, green and purple onions, lemon zest, salt, garlic, dill and fish sauce. Stir together carefully until combined well and the salmon is broken up.
- Sprinkle cassava flour on top and pour egg on top of that. Stir together carefully (I like to keep the salmon from getting completely mushy) till combined well. Let sit for 5 minutes while you make the tartar sauce.
- Add all tartar sauce ingredients to a small bowl, stir to combine. Taste and add more salt or lemon juice to your liking.
- Shape salmon mixture into 5-6 patties. AIR FRYER: prepare rack following manufacturer’s directions. Air fry at 425° for 5-6 minutes, flip them over and continue for an additional 5-6 minutes or until golden. OVEN: place patties on a parchment lined baking sheet, bake at 425° for 10-15 minutes, flip and bake an additional 8-10 or until golden brown.
- Remove from AF/Oven and serve with tartar sauce. Store any leftovers in the fridge for 4-5 days. Reheat in an air fryer for 5 mins or until warmed through.
Notes
You can also use canned salmon and even sub tuna if you'd like! Such a versatile recipe to enjoy some flaky seafood.
