Almond Butter Chocolate Chip Cookies (gluten free/paleo)
Last week I found a brand new unopened jar of almond butter in the back of the pantry. It was about to expire, so I had to create a delicious recipe to use it up! These are super quick cookies and gluten free/paleo. If you have kids get them involved, this is a great recipe to have them help in the kitchen.
Ingredients
- 1 cup1 cup1 cup Almond Butter, smooth is best, room temperature

- .25 cup.25 cup.25 cup Almond Flour

- .33 cup.33 cup.33 cup Brown Sugar
- .33 cup.33 cup.33 cup Coconut Sugar

- 111 Egg
- 1 tsp1 tsp1 tsp Pure Vanilla Extract

- .5 cup.5 cup.5 cup Dark Chocolate Chips

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350 degrees.
- Put a piece of parchment paper on a cookie sheet and set aside.
- In a large mixing bowl add almond butter, flour, both sugars, egg, and vanilla. Stir well.
- Add the chocolate chips, stir.
- Using an ice cream scoop or larger spoon create 12-15 cookie balls. Put on cookie sheet and gently press to flatten. I like to use a measuring cup with oil on bottom to press evenly. But damp fingers work great too.
- Bake for 11-12 minutes.
- Remove and let cool for 5 minutes before removing.
