Easy Egg & Avo Toasts
Avocado toast is truly one of the simplest, yet most satisfying things. Gorgeously grilled sourdough slices rubbed down with raw garlic to infuse that fabulous garlic flavour in every bite, creamy avo, onions, fried eggs, heat from chili oil, and tons of crumbled feta. Easy, healthy, and delish.
Ingredients

- 1 whole1 whole1 whole Extra Virgin Olive Oil
- 1 clove1 clove1 clove Garlic, gently smashed & peeled
- 2 whole2 whole2 whole Eggs, Large, Organic & Free-Range. Local is best! See recipe for seasonings.
- 2 whole2 whole2 whole Avocado
- 0.5 whole0.5 whole0.5 whole Red Onion, Small. Thinly sliced
- 1 whole1 whole1 whole Chili Infused Olive Oil, To Finish
- 2 Tbsp2 Tbsp2 Tbsp Parsley, chopped for garnish
- 1 whole1 whole1 whole Feta Cheese, Crumbled for garnish

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Heat a grill pan to just about medium heat. Once heated, brush EVOO on both sides of your sourdough slices and get them on the grill. Grill until crisp and golden on both sides. Carefully remove your slices to your work station and rub them down with the smashed garlic clove on both sides.
- In the meantime, begin heating a couple tablespoons of EVOO in a small non-stick set to right below medium. Crack in your eggs and season each egg with salt, pepper, pepper flakes, and dried parsley. Cook until your whites are set and yolks are golden. BASTE YOUR EGG WHITES with the hot oil as they cook which speeds up the egg whites keeping the yolks runny and perfect.
- Slice & lay out your avos on each grilled piece of sourdough. Next, some thinly sliced red onion on each. Nestle your eggs on top of your slices and garnish with a drizzle of chili oil, some fresh parsley, and as much crumbled feta as your heart desires. Serve & ENJOY!
