Beat The Heat – Loaded Salads
I made the mistake of using my oven for a while during the heatwave and let me tell you, that was a mistake. My house was sweltering and I felt nauseous afterwards lol

Ingredients
- 2 head2 head2 head Lettuce, Romaine, cut into shreds, washed & dried
- 1 whole1 whole1 whole Greek Salad Dressing, I use Le Grec - A Quebec Greek dressing that's delish
- 1 whole1 whole1 whole Grana Padano Cheese, See Recipe
- 1 pinch1 pinch1 pinch Oregano, Dried, See Recipe

- 0.25 whole0.25 whole0.25 whole English Cucumber, sliced into rounds
- 0.5 whole0.5 whole0.5 whole Red Onion, small onion, thinly sliced
- 1 whole1 whole1 whole Sweet Hot Pickled Peppers - Mama Lil's, Any brand of pickled hot peppers

- 2 whole2 whole2 whole Ultimate Plant-Based Chick'n Filets - Gardein
- 1 whole1 whole1 whole Feta Cheese, crumbled for garnish
- 1 whole1 whole1 whole Himalayan Pink Salt

- 1 whole1 whole1 whole Black Peppercorns, Ground Fresh

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat your oven according to package directions for your crispy filets. Get them onto a parchment lined baking sheet and bake according to directions until crispy and golden brown.
- Toss your romaine lettuce with as much grana padano as your heart desires along with a pinch of oregano, black pepper, and dressing. Don't overdress. Divide between two plates.
- Arrange cucumbers around the salad. Slice your crispy filets and nestle them on top of the salad followed by pickled hot peppers, more red onions, and crumbled feta cheese. ENJOY!
