Greek Salad with Spinach Artichoke Balls
It has definitely been Jonathan's Greek Salad Summer. I switched things up this time with some crispy spinach and artichoke bites I found at the market. Dressed romaine, fresh veggies, crispy bites, and tangy feta. So good!

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat your oven according to package directions for spinach artichoke bites. Get 6 bites onto a parchment lined tray and once preheated, bake according to package directions. Don't be surprised if they burst a little bit, they were still delicious.
- With 5 minutes remaining, assemble your salad plate. Add your romaine to a medium sized mixing bowl and add desired amount of dressing. I prefer my lettuce to be lightly dressed, it holds up better when eating. Toss until combined and get your lettuce onto your desired serving plate. Next, arrange your red onions, halved tomatoes, cukes, and use a fork to drop sliced roasted peppers around your salad. Nestle the golden brown spinach artichoke balls in the center of your salad and finish with as much crumbled feta as your heart desires.
- ENJOY!
Notes
- The Spinach Artichoke Balls are a product I found and wanted to review. They're a frozen take home product sold under the Great Value brand.
