Enchilada Casserole
One of my favorite things to meal prep for the week. Not only is it delicious, but also protein packed and totally customizable with your favorite veggies.
Ingredients
- 1 whole1 whole1 whole Rotisserie Chicken
- 1 whole1 whole1 whole Green Enchilada Sauce - Siete Foods
- 1 cup1 cup1 cup Black Beans
- 1 cup1 cup1 cup Canned Corn
- 1 whole1 whole1 whole Red Bell Pepper
- 1 whole1 whole1 whole Rice Cooked in Bone Broth - A Dozen Cousins, This makes it super easy! But feel free to make your own rice 🙂
- 0.5 cup0.5 cup0.5 cup Cottage Cheese
- 0.5 cup0.5 cup0.5 cup Pepper Jack Cheese, Shredded

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350 F
- Shred your chicken (I like to do this right in the baking dish I am using- a rectangular 13x9”)
- Add the pepper, beans, corn, rice
- Add dollops of cottage cheese, and pour enchilada sauce over the top
- Give everything a good mix with a large spoon
- Sprinkle pepper jack cheese over the top
- Cover and place in the oven for 30 minutes
- Uncover and place back in the oven for 10 minutes
- Enjoy over crisp lettuce and a side of tortilla chips!
Notes
I love a dozen cousins brand of precooked bone broth rice, but if you do not have that cooking your rice in broth instead of water boosts the nutrition and flavor!
