Grinder Chopped Salad
This salad has an amazing combo crunch, acid, salt, and subtle sweetness. It’s a crave-worthy dish that you will be making on repeat! This is best served with a side of classic potato chips.

- 4 whole4 whole4 whole Persian Cucumber, Or 2 English cucumbers
- 0.5 cup0.5 cup0.5 cup Artichoke Hearts, Marinated
- 0.25 cup0.25 cup0.25 cup Castelvetrano Olives
- 4 Tbsp4 Tbsp4 Tbsp Organic Everyday Extra Virgin Olive Oil - Kosterina
- 0.25 cup0.25 cup0.25 cup Pickles, cornichon
- 2 Tbsp2 Tbsp2 Tbsp Apple Cider Vinegar

- 2 tsp2 tsp2 tsp Amore [Italian] Seasoning - Primal Palate
- 2 Tbsp2 Tbsp2 Tbsp Dijon Mustard
- 1 tsp1 tsp1 tsp Honey - Shannon Farms
- 3 Tbsp3 Tbsp3 Tbsp Parmesan Cheese
- 1 whole1 whole1 whole Deli Turkey, or Protein of choice: I used deli chicken, but salami, turkey, rotisserie chicken would all be great

- Finely chop all salad ingredients
- In large bowl, combine all dressing ingredients and whisk to combine
- Toss all veggies and protein in to the bowl and combine with the vinaigrette
- Enjoy with a side of chips!
Notes
Feel free to adjust the protein addition to your choice. Some meatless options that would be delicious would be chickpeas roasted in Italian seasoning and olive oil!
