espinaca & artichoke protein queso dip
a mexican-inspired twist on classic spinach & artichoke dip 🌶️🧀 inspired by jose peppers’ famous espinaca con queso, but made lighter with cottage cheese + greek yogurt for a high-protein boost. creamy, cheesy, & perfect for dipping!
Ingredients
- 111 Onion, finely chopped
- 12 oz12 oz12 oz Frozen Spinach, finely chopped
- 14 oz14 oz14 oz Artichoke Hearts, drained & finely chopped

- 1 cup1 cup1 cup Salsa Verde

- 1 cup1 cup1 cup Cottage Cheese
- 0.5 cup0.5 cup0.5 cup Plain Greek Yogurt
- 4 - 6 oz4 - 6 oz4 - 6 oz Pepper Jack Cheese, + extra for garnishing on top
- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Arrowroot Flour, mixed in a little water
- 0.5 tsp0.5 tsp0.5 tsp Garlic Powder

- 0.5 tsp0.5 tsp0.5 tsp Onion Powder

- 0.5 tsp0.5 tsp0.5 tsp Salt and Pepper
- 0.5 - 1 cup0.5 - 1 cup0.5 - 1 cup Water
- Cilantro, finely chopped
- Red Pepper Flakes

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- to a skillet, add onions & sauté until translucent.
- add artichokes & spinach; cook until spinach is wilted.
- in a food processor, add all remaining protein queso ingredients, except water.
- transfer protein queso to a sauce pan, along with sauteed veggies & water.
- simmer queso dip until cheese is melted & sauce has thickened.
- option to sprinkle extra cheese, cilantro, & red pepper flakes on top & broil for 3-5 minutes.
- serve with your favorite tortilla chip for dipping.
