Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. In a large pan, pour in a drizzle of olive oil and sauté the shallot and onion until fragrant, approximately 2 minutes.
  2. Pour in the chopped spinach and artichokes. Let simmer and cook for 3 minutes and add in the sour cream and cream cheese.
  3. Continue to cook and whisk until the cream cheese melts into the spinach.
  4. Add in the Parmesan and season with salt and pepper.
  5. Whisk on a low flame and continue to stir until all ingredients are combined, an additional 10 minutes.
  6. Serve warm with chips or fresh cut vegetables.
