Looking for a fun and flavorful twist on chicken tenders? These Extra Crispy Chicken Nuggets are the perfect combination of crunchy, savory, and slightly sweet. To really help pack the crunch, I've used Nana Joes Oat Texas Twisted Praline Granola. Baked or air-fried to golden perfection, they're so good! Easy to make and packed with texture, they’re ideal for weeknight dinners, game day snacks, or meal prep. Serve with your favorite dipping sauce for a crowd-pleasing treat, provecho amigos!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. For the oven: Set oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. For air-fryer: Preheat to 375.
  3. Prepare your dredging station: In one bowl, mix the flour, garlic powder, paprika, salt, and pepper.
  4. In another bowl: whisk eggs with pinch of salt until smooth.
  5. In a third bowl: combine crushed Nana Joes granola with breadcrumbs.
  6. Dip each chicken piece into the flour mixture, coating evenly.
  7. Dunk it into the beaten eggs, letting the excess drip off.
  8. Press it into the granola mixture, ensuring a full and even coat.
  9. Arrange the coated chicken pieces on the prepared baking sheet. Lightly spray them with oil and add a pinch of salt for crispiness.
  10. Bake for 15-20 minutes, flipping halfway, until golden and the internal temperature reaches 165°F.
  11. Air Fry at 375°F for 10-12 minutes, flipping halfway. Remove chicken once the internal temperature reaches 165°F.
  12. Serve immediately and pair with your favorite dipping sauces like honey mustard or ranch! Provecho amigos!

Notes

I pre-marinade my chicken in 2-3 cups of pickle juice. It helps keep the tenders moist, flavorful, and juicy!
