Chicken nuggets are a favorite in our house, and this is our go-to recipe for gluten-free, high protein chicken nuggets. They are perfectly crispy on the outside, and nobody would ever know that they don’t contain any starch or carbs for the “breading”.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat your air fryer to 390 F.
  2. Prepare two wide, shallow bowls, one with the Pork Panko and Herb Garden seasoning mixed in, and the other with the whisked egg.
  3. Dip the chicken thigh pieces in the whisked egg, then toss in the seasoned pork panko. Lightly shake off any excess pork panko.
  4. Spray the air fryer basket with avocado oil spray.
  5. Cook the chicken nuggets for 10-12 minutes, or until cooked through.

Notes

Little Helper ideas: have your kiddo help with mixing up the pork panko, "breading" the nuggets, or whisking the eggs.
