Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat the oven to 375 degrees Fahrenheit.
  2. Add the glazed pecans and flour to a food processor and pulse until mixture reaches the consistency of flour.
  3. Pour the flour mixture into a mixing bowl. Add in the melted butter and stir the ingredients until they stick together like dough.
  4. Roll the dough into balls, about the size of a quarter. You should have about 11 cookie dough balls.
  5. Put the cookie dough balls onto a cookie sheet and bake them for 5 minutes. Take them out of the oven, and use a fork to press down on each cookie, creating a cross hatch on the top.
  6. Bake the cookies for another 9 minutes. Then take the cookies out of the oven and let them cool completely.
  7. Once cooled, take a scoop of vanilla ice cram and place it on one cookie and then place another cookie on top to create your ice cream sandwiches.
  8. Enjoy!
