Fig Chutney Grilled Cheese With Spinach
The classic grilled cheese has just been reimagined! Try out my sweet and savoury fig chutney grilled cheese stuffed with mozzarella and spinach on sourdough bread.
Ingredients
- 2 whole2 whole2 whole Sourdough Bread, (two sliced used)
- 2 Tbsp2 Tbsp2 Tbsp Fig Chutney

- 0.5 cup0.5 cup0.5 cup Mozzarella, (grated, I used Saputo)
- 2 Tbsp2 Tbsp2 Tbsp Margarine
- 1 tsp1 tsp1 tsp Extra Virgin Olive Oil, (I used tuscan infused olive oil by Zoë Olive Oil)

- 0.333 cup0.333 cup0.333 cup Spinach

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Spread margarine on one side of each sourdough slice of bread and set aside
- Heat a pan on medium heat and once hot enough, add your breads margarine side faced down
- Allow breads to get crispy, should take 3 to 5 minutes at most
- In a small pan sautée your fresh spinach with tuscan infused olive oil, set aside
- Grate your mozzarella cheese and set aside
- Assemble sandwich by adding your fig chutney, spinach and cheese, then close the sandwich up
- Bring the sandwich back on the pan to get the final crisp!
- Place sandwich on a cutting board and slice down the middle at an angle
- Serve and enjoy!
