ooey gooey fruity filling baked under a smoky cookie crumble made with pprimal palate’s gluten-free flour, a crunchy BTR bar, & a touch of smoked vanilla salt, & topped with my protein-rich ice-cream. everything about this is phenomenal. check the notes for the 3 incredible flavor variations I have concocted. feel free to mix & match your fruits & ice-cream flavors to make it your own!

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. make a batch of protein ice-cream ahead of time & freeze for 4–6 hours or overnight.
  2. preheat smoker (grill or oven works too!) to 375.
  3. in a bowl, combine all ingredients for fruit filling; set aside while preparing crumble.
  4. in a food processor, blitz BTR bar, flour, monk fruit, & smoked salt.
  5. add to a bowl, then using your fingers mix in cashew butter & a teeny bit of water to form a crumble.
  6. to a cast iron skillet, add fruit filling & evenly top with crumble.
  7. add skillet to smoker & cook for 15-20 minutes or until golden brown on top.
  8. when ready to serve, let protein ice-cream sit out 10-15 minutes before scooping.
  9. remove your cookie crumble from smoker & sit for 5-10 minutes; add protein ice-cream on top.

Notes

variations:

  • black forest cherry - use dark cherries, top with chocolate protein ice-cream + dark chocolate chips
  • strawberry shortcake - use strawberries, top with strawberry protein ice-cream + BTR strawberry shortcake bar
  • peaches & cream - use peaches, top with vanilla protein ice-cream + cashews
