If you've been here for a while, you will know I have developed quite the obsession with baked oats, so here is my festive version! It is packed with >30g protein and >10g fibre per serve, making it such a great way to start your morning. And we can't forget about those complex carbohydrates (because we love carbs here!!) helping to support your energy throughout the morning! But honestly, the best part is that it is like cake for breakfast. And for all my Aussie friends out there who are like baked oats in summer, girl you crazy?! You NEED to try them cold because, trust me, it changes the game!

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat oven to 190°C (170°C fan-forced).
  2. In an oven-safe baking dish, mix together bananas, oats, protein powder, cinnamon, ginger, nutmeg, baking powder, milk, and yoghurt until well combined.
  3. Bake in the oven for 25-30 mins. Once ready, set aside to cool for 10 mins.
  4. In a separate bowl, for the topping, combine the yoghurt, cinnamon, ginger and nutmeg and mix until smooth.
  5. Once baked oats have cooled, spread yoghurt evenly over baked oats and top with mini gingerbread men.
  6. Slice into as many pieces as you desire and store in the fridge in an airtight container. Enjoy cold or microwave for 1 min to serve warm (cold is superior if you ask me hehe!)
