Gluten-free Birthday Cake Mug Cake
When you are craving birthday cake, but it's not your birthday, this is the perfect treat! An easy and quick vanilla cake batter with rainbow sprinkles and buttercream frosting that cooks in 90 seconds. The perfect sweet treat!
Ingredients
- 111 Egg
- 1/2 tsp1/2 tsp1/2 tsp Vanilla Extract
- 1 Tbsp1 Tbsp1 Tbsp Coconut Oil, melted and cooled
- 2 Tbsp2 Tbsp2 Tbsp Almond Flour
- 1 Tbsp1 Tbsp1 Tbsp Cassava Flour
- 2 Tbsp2 Tbsp2 Tbsp Maple Sugar
- 1/2 tsp1/2 tsp1/2 tsp Baking Powder
- 1/8 tsp1/8 tsp1/8 tsp Himalayan Pink Salt
- 1 Tbsp1 Tbsp1 Tbsp Carnival Sprinkles (India Tree brand)
- 2 Tbsp2 Tbsp2 Tbsp Vanilla Buttercream Frosting, optional

- In a small mixing bowl, whisk together the egg, vanilla, and melted and cooled coconut oil.
- Add in the almond flour, cassava flour, maple sugar, baking powder, and a pinch of salt. Whisk until the batter is smooth.
- Stir in the sprinkles, and pour the batter into a standard size mug.
- Microwave for 90 seconds.
- Allow to cool, and then frost with homemade buttercream frosting, or your choice of non-dairy frosting.
