Gluten-Free Stuffing
Stuffing is a staple that nearly everyone loves. Fluffy and flavorful, this gluten-free and grain-free recipe is easy to make and a perfect way to use up any leftover homemade Otto's Natural - Cassava flour bread you may have. Enjoy! (Recipe By: 50 Shades of Avocado)
Ingredients
- 2 Tbsp2 Tbsp2 Tbsp Avocado Oil
- 1/4 cup1/4 cup1/4 cup Onion
- 1/21/21/2 Celery, stalk
- 1 clove1 clove1 clove Garlic
- 2 cups2 cups2 cups Bread, cubed (use your favorite Otto's Naturals Bread Recipe)
- 1 Tbsp1 Tbsp1 Tbsp Parsley
- 1 sprig1 sprig1 sprig fresh Rosemary
- 555 Sage, (leaves)
- 1 sprig1 sprig1 sprig Thyme
- 1 cup1 cup1 cup free range, organic Chicken Stock

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Make the bread the day before and let it sit out on the counter to dry.
- Cut bread into small cubes and place on a parchment paper lined baking sheet. Bake in the oven on 300 degrees Fahrenheit for 20 minutes or until completely dry.
- Mince onion, garlic and celery. Mince rosemary, sage and thyme and set aside.
- Heat 2 tablespoons avocado oil in a medium sized pot over medium heat. Fry onion garlic and celery for a couple of minutes until slightly browned. Reduce temperature to medium/low and add rosemary, sage and thyme. Fry for a couple of minutes and stir occasionally.
- Add bread cubes followed by chicken stock and stir. Cook until all the liquid is soaked up by the bread cubes. If the bread cubes are too dry, add additional chicken stock.
