Grain-free Tabouli Salad
Today I am sharing a salad that you can whip up and call Christmas. Ok, maybe call it Tabouli Salad, but its red and green colors are just asking for a little holiday recognition, right?!
Ingredients
- 2 cups2 cups2 cups Cucumber, chopped (2 cucumbers)
- 1 cup1 cup1 cup Cherry Tomato, sliced in half (a serrated knife does the trick nicely)
- 1 whole1 whole1 whole Red Bell Pepper, seeds removed and diced
- bunch bunch bunch Flat Leaf Parsley, minced
- 4 Tbsp4 Tbsp4 Tbsp Extra Virgin Olive Oil
- 2 Tbsp2 Tbsp2 Tbsp Lemon Juice
- 1/2 tsp1/2 tsp1/2 tsp Sea Salt
- 1 tsp1 tsp1 tsp dried Oregano
- 1 tsp1 tsp1 tsp Italian Seasoning

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Whisk olive oil, lemon juice, sea salt, dried oregano and Italian seasonings in a mixing bowl. I like using a baker’s spatula to do this which technically is not whisking but…
- Toss cucumbers, cherry tomatoes, red bell pepper and Italian parsley in the bowl until combined.
- Serve as a side salad or add 4-6 ounces of shredded chicken breast to make this a complete meal.
