Green Beans with Pancetta & Figs
Having a side dish that isn't boring is important when trying to get your veggies in every day. This dish has so much flavor and is very easy to make. It's Whole30 and Paleo compatible.
Ingredients
- 4 oz4 oz4 oz Pancetta, diced
- 4 cups4 cups4 cups Green Beans
- 0.5 cup0.5 cup0.5 cup Black Mission Figs, dried, quartered
- 3 Tbsp3 Tbsp3 Tbsp Sliced Almonds
- 0.75 tsp0.75 tsp0.75 tsp Sea Salt

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Fill a medium pot with water and bring it to a boil. Once the water is boiling, add the green beans to the pot. Boil for about 5 minutes.
- Immediately remove the green beans and place them in an ice bath. Set aside.
- In a large sauté pan on medium heat, add the pancetta and cook until it's crispy. The time will vary depending on the thickness of your pancetta.
- Add the green beans, dried figs, and sea salt. Toss everything together and continue cooking until the green beans are hot, about 5-7 minutes.
- Sprinkle the toasted almonds on top and serve.
