Grilled Peaches with Vanilla Ice Cream
The perfect summer dessert. Peaches grilled until soft and tender topped with your favorite vanilla ice cream. The finishing touches - a delicious drizzle of honey, sprinkled sea salt flakes, and crushed pistachios. This is a great low effort, easy dessert.
Ingredients
- 1 whole1 whole1 whole Peach, cut in half, pit removed
- 1 Tbsp1 Tbsp1 Tbsp Extra Virgin Olive Oil, or neutral oil
- 222 Vanilla Ice Cream, can sub in a caramel vanilla combo
- 2 Tbsp2 Tbsp2 Tbsp Honey

- 1 pinch1 pinch1 pinch Maldon Sea Salt Flakes, optional

- 1 Tbsp1 Tbsp1 Tbsp Pistachios, Raw, finely chopped

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Wash the peach then cut in half and remove the pit.
- Pre-heat the gas grill to medium or warm a grill pan.
- Brush each of the cut sides of the peach with the 1 tbsp of extra virgin olive oil
- Place the peach cut side down onto the grill and cook for 5-6 minutes until you see nice grill marks and the peach is starting to soften, flip and cook another 5-6 minutes until the peach is warmed through and soft.
- Remove from the grill and place into a serving bowl cut side up.
- Add one scoop of vanilla ice cream to the top of each peach.
- Drizzle each peach with the honey, then sprinkle with the sea salt flakes and pistachios.
Notes
You can sub in good quality extra virgin olive oil for the honey if desired.
